Haven't calculated numbers, but 4 engines run a 64 x 64 quarry just well enough to get it through the night. However, combustion engines tend to explode easier if you don't pay attention to then for extended periods of time. I have not quite figured out how to use them, but they could probably power a quarry somehow. Another option is electric engines , you can feed your EU into electric engines that can drive your quarry.
